How To Make An Ombre Cake



My birthday is coming up next week (2nd of July) and I am yet to master making an epic cake! I have been on Utube finding out how to make an Ombre cake and stumbled upon this fantastic tutorial! This gets me so excited to bake my cake I have to admit! Fingers crossed I don't make a mess out of it.

Christmas comes only once a year and this Christmas we are spending it with my side of the family. My family lives more or less about four hours from where we live. Our four hour journey didn't take exactly four hours due to the fact that I am now 32 weeks pregnant and having to pee almost every half hour, plus we had our little pup Lola with us in the car having to do the same thing. It all made for a bit of a fun adventure! 

With that said, I wanted to share a few favorite things I love about Christmas:

Rabbit Sugar Cookies






I spend the day enjoying playing with my new rabbit cookie cutters from WholePort. While the weather isn't the greatest here in Hawkes Bay I am making the most of just relaxing at home and enjoying baking up a storm. Edmonds Red Velvet Cupcakes



I tried my hand at making the new Edmonds Red Velvet Cupcakes cake mix today wich proved to be oh so easy! For those who don't know, most "kiwi" households have an Edmonds cookbook handy somewhere.

Anyway, being a big fan of Red Velvet cupcakes I couldn't deny that real cream cheese frosting just taste worlds apart from the powdered stuff. My verdict is to buy your own cream cheese, that way you get enough to cover your basis and enjoy the real taste of what a true Red Velvet Cupcake should taste like.

Cake Pops



At last, I finally tried my hand at making cake pops with the help of getting all my baking supplies from Wholeport. Getting the cake pop moulds made it so much easier than trying to do everything by hand. The packet came with the sticks which was a great help. I'm also particularly in love with my lovely heart shaped doilies.

PS: For the cake pop mixture just buy a cake mix and follow the instructions from here. Any type of plain cake mixture will do for example chocolate cake, sponge or lemon cake. Good luck and enjoy!

    Recipe | How To Make French Macarons



    How To Make French Macarons (Macaroons)

    Ingredients:

    2 eggs
    1-cup of Icing Sugar
    70g Ground Almonds
    1/4 cup Caster Suger
    Food Colouring



    Macaron Recipe Directions



    1) Heat up the oven to 165
    ° (fan bake). Separate your egg whites in a bowl and whisk until stiff. Add 1/4 cup of caster sugar to the mix and continue to beat. Add a teaspoon of food coloring of your choice to the mixture.

    2) In a separate bowl measure out a cup of icing sugar and sieve into a large mixing bowl. 

    Sieve in a 3/4 cup of ground almonds.

    3) Combine the two mixtures together with a spatular and mix well together. Take out a large flat baking pan and place a sheet of baking paper on it. Spoon half a teaspoon of mixture in circles onto your baking tray until baking sheet is covered in macaron mixture. 

    4) PS: (here comes the secret) Once you have places all the mixture onto the tray, hold the baking paper firm on either sides and ‘bang’ the tray onto a flat surface. This gives the macarons a ‘foot’ when baked and creates the perfect smooth shape. 

    5) Bake the mixture for 10 - 15min. Your macaron should have a hard shell and a soft center. Leave your macarons on a cooling rack to cool down. 


    Butter Cream Frosting


    2/4 cup softened unsalted butter 1 cup confectionery sugar 1 teaspoon vanilla extract 
    1/4 cup fruit sweetened jam 
    food colouring

    Beat softened butter until smooth and fluffy.  Add sugar and beat until combined with butter about 3 minutes.  Add vanilla and milk, beat frosting for about 7 – 8 minutes.  Beat in the jam until well combined.  Using a toothpick, mix in just a small amount of the food coloring. (Continue to add food coloring in small amounts until the right color is achieved.)

    Recipe | Cinnamon Tea Cake



    CINNAMON TEA CAKE RECIPE


    2 tbn butter
    1/2 cup sugar
    2 eggs
    1/2 cup of milk
    1 cup of flour
    1 tsb baking powder
    pinch of salt

    Icing: 1 1/2 tsb Cinnamon & 1 tb butter

    Heat over to 350F. Cream butter & sugar. Add eggs and beat well. In another bowl mix the powder ingredients. Mix well together in a mixing bowl and add in the powder ingredients in slowly while beating. Scoop ingredients into a mould. I got mine from WholePort.

    Bake for 20-25 minutes and leave to cool down on a cooling rack. Sprinkle 2 tablespoons of cinnamon and 2 tablespoons of butter onto the cakes. Use writing icing to decorate the cakes.
