Recipe | Vanilla Cupcakes




VANILLA CUPCAKE RECIPE

Nothing better than a night in baking, am I right? I am always on the look out for the quickest and easiest recipe as I don't enjoy getting technical when it comes to baking. They are scrummy and oh so fluffy.

Ingredients:

225g soft butter
225g caster sugar 
225g self-raising flour 
1 tsp baking powder 
4 eggs 
1 tsp vanilla essence

1. Preheat oven to 175C. Place 18 paper baking cases in muffin tins.

2. Place all the ingredients in a medium bowl and beat with an electric whisk until smooth 
    and pale, about 2 to 3 minutes.

3. Spoon the mixture into the cases. Bake for 20min.

4. Remove the tins from the oven and cool for 5 min. Then remove the cupcakes and 
    cool on a rack.

5. Use a piping bag to ice cupcakes.

Butter cream Icing Ingredients:

110g soft butter
1/2 tsp red food coloring
110g icing sugar

1. For plain butter cream, beat 110g butter until soft, then beat in 110g icing sugar.

2. Add a half a teaspoon of vanilla essence and half a teaspoon of red food coloring.

Enjoy.
